The South African culture of beer has evolved over recent years with the explosion of craft beer brewing and beer-food pairing.
The South African Breweries (SAB) and LiquidChefs Mobile Bar Services created a number of delicious beer cocktails that are easy to make and low in alcohol content.
Castle deLite
1 bottle of Castle Lite
Elderflower and honey foam
Garnish: piece of lemon zest
Brutal Fruit Lavascious Lemon
Make foam by placing 25ml honey, 25ml Elderflower Syrup and 12,5ml Brutal Fruit Lavascious Lemon into a shaker or bowl with 1 egg white. Whisk or shake the above ingredients together to aerate.Pour the lite beer into the wine glass.Spoon or pour over the foam onto the lite beer.Garnish with a piece of lemon zest.
To make the Elderflower & Honey Foam, dry shake 25ml honey, 25ml elderflower syrup with 12,5ml Brutal Fruit Lavascious Lemon, a dash of grenadine or pomegranate syrup and 1 egg white.
Milk Stout Medley
8 Raspberries
12,5ml Vanilla Syrup
1 Bottle Castle Milk Stout
1 Bottle Brutal Fruit Cranberry
Garnish: ground nutmeg
Place raspberries and vanilla syrup into a glass.Using a muddler/pestle press the raspberries and syrup together.Add cubed ice and Brutal Fruit Cranberry to the glass and stir slowly to infuse the flavours into the liquid.Pour Castle Milk Stout into Brandy snifter. Strain raspberries, syrup and Brutal Fruit into brandy snifter filled with the beer.Garnish with a dusting of Nutmeg on top.
Miller Summer Storm
12 mint leaves
25ml honey
50ml Pineapple Juice
Dash of lemon
1 bottle Miller Genuine Draft
Garnish: mint sprig
Place mint leaves and l honey into a mixing glass or cocktail shaker.Press mint and honey using a muddler/pestle.Add cubed ice, pineapple juice and dash of lemon juice to glass and stir to infuse flavours together. Pour Miller Genuine Draft into stemmed glass and strain the infused liquid over the beer.Garnish with a mint sprig.
Black Label Fusion
2 basil leaves
2 slices ginger
1 sprig thyme
Salt
Pepper
dash of sugar syrup
100ml Redd’s Dry
Dash of bitters
1 bottle Carling Black Label
Garnish: thyme sprig
Place the ginger into a glass and bash slightly with muddler/Pestle.Add basil leaves, thyme, salt and pepper to the glass.Add sugar syrup to the herbs and press using a muddler/pestle.Add cubed ice and 100ml Redd’s and stir to infuse the flavours.Pour Carling Black Label into Hurricane glass and pour herb infusion on top.Garnish with a thyme sprig and top off with a dash of bitters.
