2 November is National Deviled Egg Day – a day on which this popular hors d’oeuvre or side dish for parties, reunions and dinners is celebrated as the star of the show.

Deviled eggs are also known as eggs mimosa, stuffed eggs, salad eggs or dressed eggs. They’re made of hard-boiled eggs which have been shelled, cut in half and filled with the hard-boiled egg-yolk, mixed with a variety of ingredients, such as mayonnaise, mustard, tartar sauce, diced pickle, salt, pepper, onion, caviar, capers, cayenne pepper or sour cream.

The filling is scooped or piped back into the egg ‘cup’ and often garnished with paprika. Some other popular filling options include anchovy, bacon and jalapenos – these are also sometimes used as garnishes.

The first known print reference to ‘deviled’ that referred to food, appeared in 1786.
