June is National Fresh Fruit and Vegetables month, and 17 June is observed annually as National Eat Your Vegetables Day, which serves as a reminder to continue with this part of a healthy diet.

Vegetables are an essential part of a healthy lifestyle and can be enjoyed in a variety of ways, including as part of a main meal or a snack. Each vegetable has its own nutritional content and generally contains little protein or fat. Vegetables vary in proportions of Vitamin A, Vitamin K and Vitamin B6, as well as provitamins, dietary minerals and carbohydrates.

They also contain a variety of other phytochemicals, some which have antioxidant, antibacterial, antifungal, antiviral and anticarcinogenic properties. Many vegetables also contain fibre, which is very important for normal, healthy gastro-intestinal function. Another benefit of vegetables is their essential nutrients which are necessary for healthy hair and skin.

The risk of heart disease and Type 2 diabetes may be lowered considerably when you eat a diet consisting of the recommended amounts of fresh fruits and vegetables. These diets may also help to decrease bone loss and offer protections against some cancers. The potassium some vegetables provide, may aid in the prevention of kidney stone formation.
